German Chocolate Cake Oats

Some mornings I wake up really hungry. It's usually after a long training session the day prior and my body wants more and more food to recover. On those mornings, I take my oatmeal and go overboard with it. To add calories and nutrients, I add in items I normally wouldn't. These add ins are still very healthy and good for you, but they tend to be higher in calories and fats than I usually eat. The morning I made these, I spotted a bag on unsweetened coconut flakes and thought... aw yeah, German Chocolate Cake!

This recipe isn't too high in calories, but it has a higher content in fat than most of my oatmeal recipes so watch for that if you are trying to limit your fat intake.


RECIPE

GERMAN CHOCOLATE CAKE OATS

Ingredients:

  • 1 Cup Quick Cook Oats
  • 1 Tsp Maca Powder
  • 2 Tbsp Cacao Powder
  • 3 Tbsp Unsweetened Coconut Flakes
  • 1/4 Cup Dried Dates (chopped)
  • 4 Tbsp Dark Chocolate Chips
  • 1 Cup Sliced Banana
  • 5 Tbsp PB2 with Premium Chocolate
  • 2 Tsp Cacao Nibs
  • 1 Tbsp Hemp Hearts
  • 1 Tsp Acai Powder
  • Sprinkle of Cinnamon
  • 1/3 Cup 2% Plain Greek Yogurt (omit or use plant based yogurt for a vegan option)

Instructions:

  1. Place oats and 2 cups water into a small saucepan. Bring to a low boil.
  2. Add in 1/2 cup of sliced banana, the coconut flakes, and the chopped dried dates. Stir and cover while it simmers on low heat for about 3min.
  3. Stir in the cacao powder and maca powder. Add a little water if you need to and let sit covered on low heat until everything is absorbed.
  4. In another small bowl, mix the PB2 with enough water to form a peanut butter.
  5. To plate... Place the greek yogurt in a bowl and top with oats, chocolate chips, PB2, Acai Powder, cacao nibs, and hemp hearts. Place remaining banana on top and sprinkle with cinnamon.
